Samosa’s

I used to buy these lovely samosa’s from a local Indian grocery store in the town where I lived. They were made by a row of Indian ladies every day. You can rarely buy these any more and I am so pleased I have figured out how to make them during lockdown 1. I think at the time of writing I have made about 600 samosa’s so I am getting quite good at it. The most I have made is 160 in one day and can comfortably knock up 80 in one day by myself as well as dishing up 3 meals to the kids.

My favourite fillings are the traditional lamb samosas and the vegetable one containing potato and peas. I have used turkey mince instead of lamb which works well especially if you like a leaner meat and not keen on lamb. A third favourite is the chicken and potato filling using chicken breast. I have also been asked to make a customised filling of potato, butternut squash with extra onions. The vegetable ones containing potatoes and peas are vegan.

The ingredients for the pastry for me this makes 5 balls of dough, 10 samosas, each dough ball weighing approx 75g.
  • 225g plain flour
  • 2 tsp sea salt
  • 2 tbsp vegetable oil

The Filling for potatoes and Peas Filling:https://www.sanjanafeasts.co.uk/blog/2019/09/the-best-vegetable-samosas/ I do omit the green chillies, mango powder and fresh coriander. The quantities below are just enough for 10 samosas but if you prefer a deeper fill I would double up the quantities.

For the filling:

  • 250 g potatoes
  • 100 g peas I use frozen
  • 1 tbsp any flavourless oil
  • 2 tsp whole cumin seeds
  • 1 large onion finely diced
  • 2 1/2 cm piece fresh ginger peeled and grated
  • 1 tsp ground turmeric
  • 1 tsp ground coriander seeds
  • 1 1/2 tsp salt
  • OMIT
  • 1 tbsp fresh coriander finely chopped
  • 2 tsp amchur dried mango powder
  • 3 hot green chillies finely chopped

The lamb/turkey/chicken filling

I remember I looked for ages for a recipe and unfortunately I did not jot down the original source.

The ingredients

250g lamb mince (or minced turkey or diced chicken breast)

100g Peas

Ingredients 1

2 small potatoes cubed and boiled

1tsp mince ginger

1tsp mince garlic

1 diced onion

Ingredients 2

1tsp garam masala

1tsp curry powder

1tsp cumin

1tsp tumeric

2 Bay leaves

1/2tsp salt

Fry ingredients 1 in some oil for a few minutes, then add ingredients 2 and fry for 2 mins, add the minces fry for a few mins, add potatoes and peas and fry for another 5 mins. Let cool and use.
