Sweet loaf (one proof method)
Ingredients (450g loaf pan)
260g Bread flour3g Instant dry yeast160-180g Egg ( 1 1/2 med eggs or 1 XL) + full fat milk30g Caster sugar (10g if making a salted loaf)2g salt (6g for salted loaf)30g Butter (softened at room temp and cubed)
  1. – Mix all ingredients (except butter) together and knead till you get a silky and elastic dough. If using bread machine add wet and
  2. – Add butter and knead till window pane stage
  3. – Divide dough into 3 portions, then roll out flat. swiss roll, and place into greased loaf pan
  4. – Leave to proof till dough doubles in size.
  5. – Bake in preheated oven of 170 degrees C, second lowest rack for 45-50 mins.
  6. Cover the loaf with foil if it starts to brown before finished baking.
Notes ****I used 78g of egg (1 and 1/2 med egg ) and 102g of milk. Total weight of egg and milk should be 160g-180g. I baked at 160 degrees C as my oven is fan powered. I covered the loaf during the last 10 mins of baking. I decided to egg wash my loaf for a shiny top ***
