Aloo Gobi

One of my favourite dishes and it does take a little bit of patience for the potato and cauliflower to steam in its own moisture.

Ensure your potato is cooked to a size that it will cook the same time as the cauliflower or the cauliflower may become overcooked and disintegrate.

My list of ingredients as I tend to buy a large cauliflower and add more potatoes so I had to increase the spices:

Ingredients

4 TBSP of oil

2 tsp cumin seeds

350g Potatoes and 1 Med Cauliflower

Heat the oil, fry the cumin seeds until they are fragrant. Add the potato and cauliflower and steam fry covered with a lid until the vegetables are soft.

The Tarka

2 small onions sliced

1 TBSP ginger and 4 fat garlic cloves crushed

1 TBSP of tom puree and some water

3 tsp coriander powder

1 tsp tumeric

1 tsp of chilli powder

1 tsp salt

1 tsp sugar

2 tsp garam masala
